Harvest Stew
It all begins with an idea.
Ingredients:
Olive oil
1 lb. ground turkey or venison sausage
1 onion, diced
Pinch salt
1 teaspoon Italian seasoning
½ teaspoon black pepper
¼ teaspoon paprika
3 cloves garlic, pressed through garlic press
2 medium-large carrots, peeled and diced
2 medium-large parsnips, peeled and diced
2 ribs celery, diced
6 baby yellow potatoes, cubed (skin on)
½ pound (8 ounces) diced butternut squash
6 cups chicken or beef stock (low sodium)
1 cup chopped kale
1 tablespoon chopped parsley
Instructions:
Gather and prep all ingredients, dice and slice veggies before getting started!
Heat 2 tablespoons of oil in a large soup pot over medium-high heat.
Add sausage in a single layer, caramelize for a few minutes, then stir and caramelize for another 2 minutes.
Add onion, sauté with sausage for 3-4 minutes until lightly golden.
Add Italian seasoning, paprika, black pepper, salt, and garlic, stir to combine.
Add carrots, parsnips, celery, potatoes, and butternut squash, stir to combine with sausage and onion mixture.
Add stock and bring to a boil.
Reduce heat to medium-low, simmer uncovered for 40 minutes.
Turn off heat, adjust salt/pepper if needed.
Add kale and parsley, stir to combine, let kale wilt for a few minutes.
